Apple Cinnamon Waffles – A perfect breakfast recipe for fall


Crisp fall mornings call for a breakfast that feels cozy from the first bite. These Apple Cinnamon Waffles bring together crisp apples, warm spices, and golden, crisply tender waffles for an easy seasonal meal that makes the kitchen smell like autumn.
My Gravenstein apple tree has been quite generous this year, and therefore, I am enjoying many apple themed recipes. This recipe for Apple Cinnamon Waffles has now become a breakfast favorite. Gently spiced applesauce (made from my plethora of apples) adds natural sweetness and moisture to the batter. Warm spices and cinnamon gives every waffle that fall-flavored warmth. Topping the waffles with the lovely Spice Apple Compote added a burst of flavor to every bite.
Serve the waffles hot with a pat of salted butter and a generous drizzle of warm maple syrup. Topping with a spoonful of spiced apple compote turns them into something extra special. Adding toasted pecans, walnuts, or a dollop of whipped cream makes the plate feel weekend-worthy.

Apple Cinnamon Waffles
Ingredients
Spiced Apple Compote
- 2 Medium Apples, peeled and cut into small chunks About 2ยฝ Cups. For the best flavor, choose a firm, tart-sweet apple such as Honeycrisp, Pink Lady, or Granny Smith.
- 2 Tbsp Butter
- 1/4 Cup Brown Sugar
- 1/2 tsp Cinnamon
- 1/8 tsp Nutmeg
- 1/8 tsp Cardamom
- 1/8 tsp Salt
Waffles
- 3/4 Cup Flour
- 1/4 Cup Cornstarch
- 1ยฝ tsp Sugar
- 2 tsp Brown Sugar
- 3/4 tsp Baking Powder
- 1/4 tsp Baking Soda
- 3/4 tsp Cinnamon
- 1/8 tsp Nutmeg
- 1/8 tsp Cardamom
- Pinch Cloves
- 1/2 tsp Salt
- 1 Egg Separated
- 3/4 Cup Whole Milk Fill your measuring cup with the 3/4T. Vinegar. Top with Milk, so you have a total of 3/4C "soured" milk.
- 3/4 Tbsp Apple Cider Vinegar
- 1/2 Cup Applesauce
- 3/4 tsp Vanilla
- 1/3 Cup Coconut Oil, melted
Instructions
Spiced Apple Compote
- Melt the butter in a medium saucepan over medium heat.
- Add the Apples, Sugar, Spices, and Salt. Stir to coat Apples.
- Turn down to low and cook for about 5 minutes, until Apples are tender. Remove from heat, set aside.

Waffles
- Preheat your waffle maker
- Separate egg, putting the Egg White into small bowl, and yolk in a little cup or bowl. With hand mixer, beat egg white until stiff. Set aside.

- In a medium bowl, whisk all of the dry ingredients to combine – Flour, Cornstarch, Baking Powder, Baking Soda, Sugars, Spices, and Salt.
- Make a well in the dry ingredients. Add the Milk/Vinegar, Egg Yolk, Applesauce and Vanilla. Stir to combine.
- Add Melted Coconut Oil. Stir to combine.

- Gently fold in the stiffly beaten egg whites.

- Cook waffles according to waffle maker's instructions. Place done waffles on a tray in a warm oven, adding waffles to tray until all the batter has been cooked.
- To Serve: Butter waffles, drizzle with maple syrup, and top with the Spiced Apple Compote. Enjoy!
