Pesto Butter Salmon

Ingredients

  • 2 Large Pieces of Salmon 6-8 ounces each
  • 1 tsp Salt
  • Black Pepper
  • 2 Tbsp Butter
  • 3 Tbsp Basil Pesto Either make your own or use store bought (Costco has a nice one)

Instructions

  • Preheat oven to 425℉. Line a rimmed baking sheet with parchment paper or foil.

Prepare the Salmon

  • While oven is preheating, debone the Salmon by running your fingers across each fillet, finding the "line" of fine bones.
  • Using pliers, tweezers, or your fingers, grab the bones and pull them out one by one.
  • Once the filets are deboned, place them on the prepared baking sheet, skin side down. Sprinkle with salt and pepper.

Pesto Butter

  • In a small bowl, soften the 2 Tablespoons butter in the microwave, taking care not to melt it.... only to soften it.
  • Add the 3 Tablespoons Pesto to the Butter. Squish around and stir well until combined.

Assembling and Baking

  • Divide the Pesto Butter evenly between the Salmon Filets. Spread it over each filet, taking care to cover the entire surface.
  • Bake for 8-10 minutes or until the edges of the filets start to secrete a white, milky substance. Baking time will vary based on the thickness of the filets.
  • Remove from baking tray to serving dish. Enjoy!

Notes

If you want a slightly crisp finish, switch to broil for the last couple of minutes. The pesto butter will bubble and brown just enough to create a lightly caramelized top.
