3TbspBasil PestoEither make your own or use store bought (Costco has a nice one)
Instructions
Preheat oven to 425℉. Line a rimmed baking sheet with parchment paper or foil.
Prepare the Salmon
While oven is preheating, debone the Salmon by running your fingers across each fillet, finding the "line" of fine bones.
Using pliers, tweezers, or your fingers, grab the bones and pull them out one by one.
Once the filets are deboned, place them on the prepared baking sheet, skin side down. Sprinkle with salt and pepper.
Pesto Butter
In a small bowl, soften the 2 Tablespoons butter in the microwave, taking care not to melt it.... only to soften it.
Add the 3 Tablespoons Pesto to the Butter. Squish around and stir well until combined.
Assembling and Baking
Divide the Pesto Butter evenly between the Salmon Filets. Spread it over each filet, taking care to cover the entire surface.
Bake for 8-10 minutes or until the edges of the filets start to secrete a white, milky substance. Baking time will vary based on the thickness of the filets.
Remove from baking tray to serving dish. Enjoy!
Notes
If you want a slightly crisp finish, switch to broil for the last couple of minutes. The pesto butter will bubble and brown just enough to create a lightly caramelized top.
