Upside-Down Plum Cake

This Upside-Down Plum Cake is a beauty…. a showstopper….. AND, quite tasty as well. It is really quite easy, but looks like it was created in a Michelin stared establishment. At its core, an upside-down plum cake is beautifully straightforward. A layer of butter and sugar melts together at the base of the pan, creating the foundation for caramelization. Sliced plums are nestled into that mixture before a simple batter is poured over the top. As the cake bakes, everything transforms. The fruit softens, the sugar transforms into caramel, and the batter rises to become a tender crumb. Everything is infused with subtle fruit flavor. Once finished and flipped, you are rewarded with a beautiful cake with a glossy, jewel-toned top.

The upside-down cake, often associated with pineapple in American kitchens, actually echoes a long French tradition of fruit-forward desserts where simplicity, seasonality, and technique shine. In France, youโll find cousins to this cake in desserts such as the tarte Tatin, where apples caramelize beneath a buttery crust before being flipped into their final form. Restraint is what makes the French approach distinct. Rather than overwhelming the cake with spices or heavy sweetness, the goal is balance. A touch of vanilla and just enough sugar to highlight the natural character of the plums create a lovely, simple dessert. The best part about this wonderful summer cake is that a few humble ingredients create something so extraordinary.



Plums are particularly well-suited to this style of baking. Unlike more delicate fruits, they hold their structure under heat while releasing just enough juice to mingle with sugar and butter into a rich, almost jammy glaze. In Washington and Oregon, Italian prune plums are especially beloved. You might also find varieties like Shiro or Elephant Heart adding their own personality to the mix. Each brings a slightly different balance of sweetness and acidity, which is exactly what makes this cake so adaptable. My mom had dropped by some beautiful black plums, which I used for this particular cake. They added wonderful color and flavor to the final product.
The Perfect Base
For this plum cake, I have used a variation of a traditional French yogurt cake batter. This is the perfect cake for an upside-down cake because it is a sturdy, yet moist, cake and can stand up to the fruit on top. It has a lovely, subtle flavor that allows the plums to shine. When it comes time to flip the cake, thereโs always a moment of anticipation….Will it stick or release??? You invert it while still warm, letting gravity do its work. If you’ve generously greased the pan and used parchment paper, the pan will lift away with no issues. A glossy mosaic of plums, their edges slightly caramelized, their centers soft and luminous is revealed. The presentation feels almost too beautiful for something so easy to make.
Serving ideas
For serving, it pairs just as well with a cup of strong coffee on a misty morning as it does with a glass of late-harvest wine on a cool evening. Keeping it simple by topping with a dollop of lightly sweetened whipped cream, or a scoop of simple vanilla ice cream, would be perfect.

Upside-Down Plum Cake
Equipment
- 9" Springform Pan
Ingredients
Plum Topping
- 3 Tbsp Butter
- 1/2 Cup Brown Sugar
- 1/4 tsp Cinnamon
- 3-4 Large Plums, Red or Black You could use Italian Plums as well, you will just need several more plums in order to cover the bottom of the cake pan
- 1 tsp Heavy Cream
Yogurt Cake
- 3/4 Cup Granulated Sugar
- 1/4 Cup Brown Sugar
- 1 Lemon, Zested
- 2 Large Eggs, Room Temperature
- 2 tsp Vanilla
- 1 Cup Plain Yogurt, Greek or Whole Milk Natural
- 1/2 Cup Butter, Melted
- 2 Cups All Purpose Flour
- 2 tsp Baking Powder
- 1 tsp Fine Salt
Instructions
- Preheat oven to 350โ
Preparing Plums and Pan
- Spray a 9" Springform Pan with baking spray. Cut a 9" circle of parchment paper for the bottom. Place it in the greased pan, then spray the parchment paper lightly.
- In a small saucepan, add the butter. Heat over medium heat until melted.
- Add the brown sugar, and cinnamon. Stir until sugar has been melted and mixture is well combined. Add the Cream and stir until combined.

- Pour mixture into the prepared cake pan, spreading to cover the bottom.

- Slice the plums in half and twist to separate. Remove the pit. Slice each half into 1/8" -1/4" slices.

- Arrange Plums in the Sugar/Butter base, working from the center outward, in a spiral pattern.

French Yogurt Cake
- Begin by measuring both sugars and the lemon zest into a large bowl. With your fingers, rub the zest and sugar together until the sugar is moist and filled with lemon fragrance.

- Add Eggs and Vanilla. Mix with hand mixer on medium-high for about a minute, or until light and bubbly.

- Mix in Yogurt and Melted Butter until fully combined.

- In a small bowl, sift together the Flour, Salt, and Baking Powder.
- Gently fold the dry ingredients into the wet, taking care not to over-mix. It is ok if there are small lumps in the batter.

Assembling and Baking
- Pour batter over prepared plum pan.

- Level with an offset spatula.

- Pop into oven and bake for 45-55 minutes, or until golden brown and a toothpick inserted comes out clean. If your cake is browning too quickly, you can cover loosely with a tent of aluminum foil.
- Cool on a wire rack for 10 minutes, then prepare to flip! Run a butter knife along the edge of the pan, loosening the sides. Loosen the springform. Place a tray over the pan. Grasp both the tray and cake pan, and flip, allowing the cake to drop onto the platter – plum side up. Gently remove the parchment paper.

- Serve with a generous scoop of vanilla ice cream, and Enjoy!!
