Cod with Lemon and Dill – Buttery Perfection in less than 30 Minutes
Everyone needs an option for a quick and easy dinner in their back pocket! This Cod with Lemon and Dill is ready in less than 30 minutes from refrigerator to plate. The taste and depth of flavor makes it taste like a much more difficult and time consuming dish.

Living in the PNW, and having fisherman friends, allows for some lovely Pacific Cod in my freezer. So flakey and tasty. Cod is a mild flavored, flakey white fish that dwells in the deepest depths. Pacific cod are found in the coastal North Pacific Ocean, from the Bering Sea to Southern California in the east and to the Sea of Japan in the west. Pacific cod live for 20 years or less and can grow up to 6 feet in length. Locally, they are found off the western side of Whidbey Island in the Straits, as well as off the western sides of the San Juan Islands. They are definitely a score to reel in….. and are perfect for this Cod with Lemon and Dill recipe.
This dish is simple and quick. If you don’t have fresh cod, frozen works just as well. You can get frozen Alaskan/Pacific cod at most grocery stores. The fillets are usually in individual vacuum sealed pouches, which makes defrosting a snap.

Cod with Lemon and Dill
Ingredients
- 2 Cod Fillets, 4-6 Oz.
- 4 Tbsp High Quality Butter, Room Temperature
- 1 tsp Olive Oil
- 1/2 tsp Fresh or Freeze Dried Dill
- Paprika
- Salt
- Pepper
- 1 Fresh Lemon
Instructions
- Preheat oven tp 400℉
- Lay the Cod Fillets on a baking sheet or low-rimmed baking dish. Season with Salt and Pepper. Lightly sprinkle with Paprika. Set aside.

- Place the room temperature Butter and Dill in a small bowl. Using a spoon, smoosh the dill into the butter until mixed completely.

- Add the Olive Oil and mix in to make the dill butter more spreadable.

- Divide the Dill Butter Mixture between the two cod fillets.

- Using your fingers or back of a spoon, spread the dill butter over the cod.

- Cut several thin slices from the lemon and lay over the dill butter. Keep remaining portion of the lemon to squeeze over finished cod.

- Pop into the oven and bake for 15-20 minutes – until fish is flakey. Time will vary based on the thickness of your fish fillets. If you feel the need to check, it will be done when the internal temperature is at 145℉

- Remove from oven. Using a fish spatula, move fillets to plate. To serve, set lemon slices to side and spoon the pan sauce over the fish. Finish off with a squeeze of lemon. Enjoy.
